Carolina Tapestry Finnish-Style Sahti
For Carolina Tapestry, we went back to the well to pull deep for a new take on the style, using a variety of locally-malted grains as our base (as always), then infusing our strike water with whole juniper & pine boughs, plus copious additions of juniper berries in the kettle. This special “winter” version of the style is finished with fresh, hand-picked peppermint leaves to help round out the finish and provide some really beautiful aromas and layers along the way. 6.3% abv
