The apple brightens the pork, the crumb adds depth and texture, and the slaw and shallots keep the whole sandwich feeling fresh and balanced rather than heavy. Build it with the pork first, then apple sauce, sage and onion crumb, coleslaw, and pickled shallots before adding the lid. It’s rich enough to satisfy, but bright enough to keep you coming back for the next bite. We make these in small weekly batches, so once this week’s allocation is spoken for, that’s it until next week.
