After a challenging childhood and service in the Colombian army, he discovered specialty coffee while working at a coffee buying station in Huila. Driven by a fascination with quality and sensory analysis, he developed his skills through cupping and went on to work at some of Cauca's most innovative coffee farms, eventually becoming Head of Quality and Processing. Today, Edinson runs Quebraditas Coffee Farm with his family, producing exceptional coffees from varieties including Gesha, Bourbon Sidra, Ombligon, Chiroso, Laurina, and Eugenoids. His commitment to innovation, quality, and continuous learning is reflected in every lot he produces. About the processing: 1. Harvesting: This is carried out ensuring a minimum of 90% ripe cherry through careful hand selection to guarantee uniform maturity and optimal sugar content. 2. Floating: This ensures the removal of floaters, underripe, and defective cherries through density selection. 3. Oxidation: The selected cherries are oxidised in clean bags for 48 hours. 4. Pulping: The oxidised cherries are depulped, retaining the mucilage on the parchment. 5. Fermentation: The parchment coffee is transferred to food-grade plastic drums and fermented for 72 hours with the addition of sugar and a specific yeast strain to guide the process. 6. Drying: Mechanical drying is carried out for 72 hours in total — the first 48 hours at 39°C and the final 24 hours at 36°C to ensure gradual and uniform drying. 7. Stabilisation: The dried coffee is rested in GrainPro-type bags to stabilise moisture and enhance flavour development before milling. 8. Drying: After the 48 hours of fermentation, the coffee goes into drying, which is carried out for 76 hours at average temperatures of 40°C. 9. Stabilisation: This is done in grainpro-type bags.
