The region's rich volcanic soil provides ideal growing conditions, while its unique history enriches the character of both the land and its people. Planadas once served as a shelter for political prisoners from the Liberal Party. Over time, both Liberales and Conservadores established a harmonious relationship, leading to the famous kindness and warmth that people from Planadas are known for throughout Colombia. This spirit of unity and community is reflected in the coffee itself—a product of cooperation, care, and shared values. The Community In Tolima, we work closely with coffee associations and farmers who prioritize quality and sustainable agricultural practices. One of our key partnerships is with the Nasa Wesx Indigenous community, who cultivate coffee through the main associations in Gaitania. The Nasa Wesx people are deeply committed to both exceptional quality and environmental conservation. Their dedication to sustainable farming has earned organic certification for some of their coffees, reflecting a holistic approach that honors the land while producing outstanding results. This lot represents the collective efforts of smallholder farmers working with mixed varieties, each contributing their expertise to create a balanced, complex cup. The Process This coffee undergoes a meticulous washed process that highlights clarity and brightness. The journey begins with careful hand sorting to remove any faulty or underripe cherries—ensuring only the best fruit moves forward. The selected cherries are then de-pulped and thoroughly washed to completely remove the mucilage. The beans are placed on raised beds where they're carefully monitored and dried to achieve the ideal moisture content. This traditional method preserves the coffee's intrinsic qualities while allowing the terroir and varietal characteristics to shine through. The Result A clean, vibrant cup showcasing the best of Tolima: juicy stone fruits balanced by rich caramel sweetness, bright citrus acidity, chocolate depth, and delicate floral hints.
