Originally conceived for one of the owners’ wedding - Stefan from the deep woods of the West Kootenays, Laura from the coast - this bar leans fully into its name. If you like rosemary, you are not short changed: it comes through clearly, with a slightly woodsy, lightly resinous character that feels forest-fresh but also savoury and relaxing. Set against a bold, rich Ecuadorian dark chocolate, those herbal notes move through the deeper, roastier side of the cocoa, giving it lift without softening its edge. Then the Pacific sea salt - left a little coarse -lands as the cherry on top you can’t miss.
