Costa Rica Las Lajas Series - Honey Processing The Black Honey is the closest to a natural process and has the most fruit matter left on the seed during processing, leading to syrupy, condensed flavors that are often higher in cup presence and intensity. We absolutely see this with the Black Honey iteration of the Las Lajas. At first sip we tasted a dominant, juicy, ripe red plum that fully envelops the palate - due to the nature of the processing, rather than have a clear distinct division between flavor notes, the Red Plum seamlessly lightens and transitions to a pleasant Green Grape, before finally giving way to a syrupy acidity that reminds us of Tamarind.
