Peter Lehmann Hill & Valley Riesling The Riesling is made from Riesling grapes sourced from elevated vineyards in Eden Valley, South Australia, where shaly and schisty soils and cool growing conditions help retain freshness and aromatic character. The grapes are picked in the cool of the early morning, then crushed, chilled and drained from their skins. The free-run juice is settled before fermentation in stainless steel tanks with a neutral yeast strain. A steady fermentation lasting around two weeks helps preserve the wine's fresh fruit character and purity. Aromas of freshly picked lime, lemon meringue and lifted floral notes. Taste of lively citrus fruit, juicy acidity and waxy minerality, balanced by a touch of natural fruit sweetness. Finish of refreshing acidity, citrus flavours and good length. Pairs well with seafood, scallops, squid, fresh cheeses and vegetarian dishes.
