By Farr 'Farrside' Pinot Noir is made by a father-and-son team, Gary and Nick Farr. Gary spent over a decade making wine in Burgundy and brought that deeply traditional mindset back to Victoria. They grow this specific wine on a highly exposed site in Geelong, planted on really tough, black volcanic soil. The vines have to work incredibly hard just to survive the elements, which means they produce very few grapes, but the ones they do grow are packed with immense, concentrated flavour. In the glass, it is a big, brooding red. It is full of dark cherry and plum, but what really makes it stand out is this deep, savoury, earthy edge. They keep a lot of the grape bunches whole when they ferment it, which gives the wine a really firm structure and a brilliant peppery bite, rather than just being a simple fruit bomb. It is a fantastic, complex wine. With its robust structure and earthy depth, this sophisticated red wine demands rich, savoury dishes. It is a superb companion for a classic roasted duck breast, a slow-cooked venison casserole, or a deeply flavoured wild mushroom risotto.
