Cauliflower - Purple
Did you know? Cauliflower wasn’t always all about white. Through generations of selective breeding, white cauliflower became the familiar standard we know today. Now, breeders are bringing colour back, with varieties ranging from purple and orange to green! Its bold purple colour comes from anthocyanins, naturally occurring pigments also found in red cabbage and blueberries. It has a mild, slightly sweet and nutty flavour, and can be prepared just like regular white cauliflower, raw, roasted, steamed, grilled, or sautéed.
