Peru - Mick Dieter Noche - Anaerobic Washed
We are proud to present an exceptional and highly curated lot from Peru’s renowned Villa Rica region, a Geisha variety, carefully cultivated and processed with extraordinary precision. This coffee comes from Fundo Sudetia del Sur, a fourth-generation family estate deeply rooted in sustainable farming and biodiversity. Grown under native forest shade at elevations between 1,000–1,750 meters, this Geisha benefits from slow cherry maturation, allowing for enhanced clarity, structure, and aromatic intensity. The cherries were handpicked and sorted before undergoing a 120-hour controlled anaerobic fermentation in sealed GrainPro environments. This extended fermentation allows for a slow, controlled breakdown of sugars, significantly elevating complexity and texture. Beyond the cup, this coffee represents a strong social and environmental philosophy. The farm protects 30 hectares of forest reserve, supports over 150 families during harvest, and maintains long-term sustainable practices that preserve both ecosystem and community.
