Cut from the beef shin and left on the bone, this dramatic centrepiece gets its name from its resemblance to the legendary hammer wielded by the Norse god Thor. But this cut is much more than just impressive to look at. The beef shin is a hardworking muscle, rich in connective tissue, collagen, and deep beef flavour. While this means it isn't suited to quick cooking, it rewards patience with incredible tenderness and richness when cooked correctly. Why Low and Slow Is Essential Unlike premium steaks, Thor's Hammer requires a low-and-slow approach. As the meat cooks over several hours, the collagen and connective tissue gradually break down into gelatin, creating succulent, pull-apart beef with exceptional depth of flavour. Rushing the process will leave the meat tough, while patience transforms it into something truly special. How to Cook Thor's Hammer BBQ or Smoker Method (Recommended) Season generously with salt, pepper, and your favourite BBQ rub. Cook indirectly at 120-140°C. Allow 5-7 hours of cooking time, depending on your BBQ and conditions. Once the internal temperature reaches approximately 95°C, the collagen will have fully broken down and the meat should be beautifully tender. Rest for at least 30 minutes before serving. Oven Method Place in a roasting dish with a splash of beef stock. Cover tightly with foil. Cook at 140°C for approximately 5-6 hours. Remove the foil for the final 30 minutes if desired.
