The Vision Daimes Polanía is a third-generation coffee farmer who hopes to pass his coffee knowledge down to future generations. His farm, Dos Quebradas, grows several varietals and implements sustainable practices, such as using coffee husks to fertilize the crops. Daimes and his wife’s goals include opening a specialty coffee shop and winning first place at the Taza de la Excelencia competition, where they have already placed in the top 40 finalists. We loved this coffee right away, and we think you will too! The Process The Golden Crush begins with a 12-hour pre-fermentation period in the cherry, which aids in developent of the fruity and floral notes. Following depulping, it undergoes a 50-hour aerobic fermentation in concrete tanks, 15 days of drying on raised beds, and 15 days of rest and stabilization in-bag. This meticulous care ensures complexity and sweetness to keep the senses engaged in every sip. In the cup this coffee has lots of juicy orange, natural sweetness, and a pleasant acidity.
