This lot has high acidity that expresses once cooled. The profile of this is very different than its neighboring Colombian coffees. We purchased this coffee since we don’t come across too many (more like zero) coffees from Venezuela. Then I dug into why we don’t see a ton of Venezuelan coffee, and I learned that they used to be a top exporter in the 1800s, but due to the discovery of oil and a mix of government/economic issues, coffee exports have since decreased. Anyway, consider this one if you are looking to try coffee from a new region. Brewing Notes: V60 Water temp: 90-93C Brew recipe: 0. 18g grounds on the coarse 1. 60mL bloom (for 40 seconds) 2. 60mL second bloom (until water drains) 3. 90mL pour 4. pour to 300mL -- apply light swirls if grounds are sticking to brewer sides You want minimal contact time to pull the acids out. You don't want a long brew sitting in immersion as longer extraction in the end results in the wood coming out stronger. Rest notes: I'd leave it alone for 3+ weeks if possible.
