Pedro Ximenez is not a cask type usually associated with Aultmore's light profile. This expression bottled by Alistair Walker spent its last three and a half years maturing in a single PX Hogshead bringing out heavy sweetness. The nose opens up with aromas of mocha and freshly baked hot cross buns. The palate opens up with classic PX notes, sweet demerara sugar, dark chocolate, figs and burnt toffee.
