The palate is fine and layered, with sinewy tannins, vibrant acidity, and a savory, earthy edge. Fermented in a concrete egg, which builds texture and purity without the use of oak or additives. Unfined, with minimal sulphur used only at bottling. Pairs well with Beef, Lamb, Game (Deer & Venison), Osso Buco, Herb-Rubbed Roast Vegetables, and Aged Cheeses
