The story begins in 1914, when Gabriel de Dianous established the family’s first coffee plantation. In 1991, the second generation — led by Ricardo Fernández Carazo and Teresita de Dianous — founded Cafetalera Fernández, the family business that continues to process and commercialise their coffees today. The estate sits in the mountains of Boquete, reaching up to 1,600 masl, enriched by volcanic soil, cool temperatures and the region’s famous Bajareque mist. This fine drizzle creates a unique microclimate that slows cherry maturation and enhances sweetness — ideal conditions for producing exceptional Panama Geisha. Gran Del Val is known for its standout varieties: Typica, Geisha, Java, Caturra and Catuai. Processing: Depulped Anaerobic Fermentation This lot was harvested in early February and processed with precision: Cherries were depulped at Gran Del Val. Seeds fermented at 18°C under 5 psi pressure for 3 days. A mixed‑culture inoculum was used, including: Torulaspora delbrueckii, Pichia kluyveri, Framgarden Kveik, and Metschnikowia reukaufii. After fermentation, the coffee dried on raised beds for 15 days until reaching quality standards. This controlled fermentation enhances the Geisha’s natural florals, fruit complexity and sweet, tea‑like structure.
