Strawberry, fruity cereal, a finish like Earl grey. A natural-process Ethiopian coffee from Daye Bensa, sourced in the Sidama region. Grown high, 1,800 to 2,000 meters, where the cherries ripen slowly. Only the ripe ones get picked, floated to sort them, then dried whole on raised beds. Then they're turned by hand and kept covered through the hottest hours so the fruit dries evenly and prevents that boozy taste. Drying the cherry whole is where the berry notes come from. The fruit sits on the bean for days and the sweetness soaks in.
