For this Viognier cuvée, Thibaud carried out a 15-day maceration for 80% and direct pressing for 20%. After blending, the juices were distributed into stoneware amphorae and demi-muids. This maceration of Viognier expresses aromas of citrus and peach; the Sarawak pepper, coupled with a beautiful salinity, provides a lovely, lingering finish.
