Hand-forged in Sakai, Japan by Satoshi Nakagawa for the Hatsukokoro brand, this 300mm yanagiba has an Aogami #1 core. Its long blade is built for single-draw cuts. At 300mm, the length allows a single pass through most cuts rather than multiple strokes, a length favored by professionals though usable by home cooks with the space for it. This carbon steel knife develops a patina over time and needs regular drying to prevent rust.
