This prized parcel gives the Rosé its distinctive colour, red-fruit intensity and beautifully vinous character. Delicate salmon-pink in colour, the Rosé opens with aromas of raspberry, wild strawberry, cherry and blood orange, complemented by ripe peach, rose petals, roasted almond and subtle spice. Creamy and expansive on the palate, it combines juicy red and orchard fruits with notes of candied citrus, praline and toasted brioche. Fine, energetic acidity and a gentle saline streak provide definition, carrying the wine towards an exceptionally long, fragrant and refined finish. The Rosé’s fruit, structure and freshness make it an excellent partner for roast duck breast, quail or guinea fowl, seared tuna or salmon, glazed pork belly, mushroom and truffle dishes and rhubarb or red-berry tart. Seductive and immediately enjoyable, yet structured enough for extended ageing, it is one of the most accomplished Bollinger Rosés of recent years. Recommended serving temperature: 8–10°C.
