2021 Volnay ‘La Cave’ Mark Haisma

From the charming village of Volnay in Burgundy’s Côte de Beaune, the 2021 ‘La Cave’ from Mark Haisma showcases classic Pinot Noir finesse. Grown on limestone and marl soils, the terroir gives elegance and bright minerality. Haisma, an Australian winemaker who set up in Gevrey-Chambertin in 2007, produces small-batch wines with a light touch and some whole-bunch fermentation. The cooler 2021 vintage brings freshness and purity. Expect notes of raspberry, red cherry, rose petal and gentle spice, with fine tannins. Lovely with roast duck, game birds or a creamy mushroom risotto.
