Bright, characterful and a little unconventional, they’re made with drinkability firmly in mind. Warm, generous and quietly complex, this layers quince, baked rhubarb and sourdough over juicy nectarine and guava. Floral lift, pickled ginger spice and a saline oyster shell note bring freshness and intrigue, balancing richness with remarkable energy. Delicious now, though a little time in bottle will only add further depth.
