Most agaves to me have a striking characteristic note: tepextate has jalapenos, jabali has a peppered jerky, tobala has a white jelly belly note, so on and so forth. They have a core thing that shines brightest. With this release, the nose was vibrant and layered Full of honey, a cream cheese frosting sweetness, mango parfait, a faint touch of pepper and salinity, a touch of paper mache, lovely lime zest. Just loaded with character. Palate: The palate is creamy, rich, again with lime zest, cream cheese frosting and a rich mouthfeel. It’s creaminess on the palate is notable, satisfying. Finish: Satisfying, complex, finish that blends key lime, creamy frosting, salinity and a delicious string bean pop on the way out. Overall: 90/10=100 awesome
