If you want a specific size please indicate in the notes. Gaspé bluefin tuna has a restricted catch and is prized for its high fat content and rich flavour. It can be served raw as sashimi, sushi or tartare, or quickly pan-seared or grilled for tuna tataki, keeping the center rare to highlight its rich, buttery flavor.
