Buy the striploin whole and you choose: thin and fast for the pan, an inch and a half for the grill, or a single thick piece roasted and carved at the table.Scottish beef, matured for flavour, with the fat edge left on to baste the meat as it cooks. A sharp knife and five minutes is all it takes — slice across the grain, and wrap what you are not using within three days.Weights are a guide. Your sirloin will fall within 1.0–1.2kg; we never send under.Prepared in our own butchery and packed fresh to order, then delivered chilled in insulated packaging with ice sheets.
