Grape Variety: Gascon Producer: Les Cailloux du Paradis (Etienne Courtois & Claude Courtois) Region: Soings-en-Sologne, Loir-et-Cher, Loire Valley, France Wild Scale: 3/5 Vegan friendly wine 13% alcohol Winemaking: Organic Gascon grapes were harvested by hand. Fermentation with indigenous yeast. No fining, filtration or added sulphur sulphur. This Wine: Natural red with with a medium body. This is made with the almost extinct Gascon grape variety which gives red fruit alongside herbs and spice. An elegant but powerful wine at the same time. Notes on the Winemaker: Etienne Courtois is taking over the running of Les Cailloux du Paradis winery from his father Claude. The family produce natural wines near the village of Cheverny in the Loire Valley and the focus is very much on indigenous and rare grape varieties, some of which are very unique to this area. No synthetic chemicals are used in the vineyard. Extended barrel ageing is preferred in the cellar which usually results in precise and powerful wines.
