Using no-till, bio-intensive practices, Mark hand-tends over 300 specialty vegetables, herbs and edible flowers. Known for his contagious energy, Mark focuses on rare varieties and soil health to produce ingredients with unmatched vitality and flavor. We had a blast at our visit last year, and the feeling was mutual – “It was magical,” said Mark. Joining us in the field is Chef Chris Royster of Flagstaff House, one of Colorado's most celebrated dining destinations. Perched high above Boulder, the restaurant has earned national acclaim for its refined approach to seasonal cuisine and exceptional hospitality. Drawing inspiration from Mark's remarkable harvest, Chris and his team will create a menu that showcases the flavors of the Boulder Valley at their peak, bringing together farm and table in a setting that couldn't be more fitting.
