Vegan Chili (V)

I swear there are no animal products in this chili. If you wanted to top it with cheese or sour cream, though, I wouldn’t tell! The “meatiness” comes from walnuts, dried shiitake mushrooms, cracked bulgur wheat and a combination of earthy pinto beans and creamy Great Northern Beans, all simmered with freshly toasted and ground chiles.
