Sitting at nearly 2,000 masl, the farm’s cool temperatures, high humidity, and consistent rainfall create ideal conditions for slow cherry maturation and the development of refined acidity and floral complexity. ABOUT THE PRODUCER Café Granja La Esperanza stands among Colombia’s most influential specialty coffee producers, widely recognized for its leadership in varietal development, fermentation control, and post-harvest innovation. With multiple farms across Valle del Cauca and Cauca, the project is built on precision, consistency, and a deep understanding of how environment and processing shape cup profile. Rather than focusing on volume, the group operates with a microlot mindset — producing small, carefully managed lots that reflect both origin and process. Their work with Geisha in particular has positioned them at the forefront of competition-level coffees worldwide. ABOUT CERRO AZUL FARM Cerro Azul is one of the most iconic farms within the Granja La Esperanza portfolio, dedicated exclusively to the cultivation of Geisha. Located in Trujillo at elevations reaching 1,941 masl, the farm benefits from a stable microclimate with temperatures ranging between 15–21°C, high humidity, and consistent annual rainfall. This environment allows for extended cherry development, resulting in higher sugar concentration and greater aromatic complexity. The farm is meticulously managed, with selective harvesting and strict quality control protocols to ensure only the highest quality cherries are processed. PROCESSING & FERMENTATION This lot is processed using a carefully controlled multi-stage honey method, designed to enhance clarity, structure, and varietal expression while maintaining balance throughout the cup. Cherries are selectively handpicked at peak ripeness and floated to remove defects before fermentation begins. The process unfolds in stages — starting with 14 hours in open tanks to initiate enzymatic activity, followed by 18 hours in closed tanks to deepen structure and aromatic development. After pulping, the coffee undergoes a final 72-hour aerobic phase, refining clarity and complexity. Drying takes place over 3 to 5 days in mechanical dryers under controlled temperatures, ensuring stability, uniformity, and the preservation of the coffee’s intrinsic qualities. The result reflects Café Granja La Esperanza’s philosophy: precision at every stage, allowing the character of Cerro Azul’s Geisha to express itself with clarity, elegance, and consistency.
