Dates: Friday, April 17th & Saturday, April 18th Craft Distilling Weekend Class This is an intentionally small, hands-on class, limited to just 12 participants, designed to feel personal, relaxed, and engaging. By keeping the group small, we’re able to meet each student at their own level, whether you’re just beginning or refining an established skill. We create space for real conversation, curiosity, and connection. This course explores fermentation and distillation as both tradition and craft. We look at where these processes come from, how they’ve evolved, and how today’s distillers balance heritage with modern tools. Expect a mix of practical instruction, approachable science, and plenty of time to ask questions, experiment, and learn by doing. As our program grows, we’ll be offering advanced and spirit-focused classes for those who want to continue building on this foundation. A Weekend Built Around Craft & Community At the heart of what we do is a simple idea: great spirits are made by people who share knowledge, time, and a good drink together. This weekend is about more than just learning techniques; it’s about bringing together people who love the process, respect the craft, and enjoy swapping stories around a still (or a fire pit). We’ve designed this experience to feel welcoming, unhurried, and collaborative, the kind of environment where real learning happens naturally. This two-day course is our introductory offering, and it sets the tone for the community and culture we’re building. Experience Details 📍 Dahlonega, Georgia 📅 Two-Day Immersive Course 👩🏫 Instruction: Amanda, leading both full days 🍽️ Food & Hospitality: Lunch provided daily; hosted dinner Saturday evening Dress for the weather & Come ready to learn, participate, and enjoy the process. Day One: Fermentation & Mash Craft North Georgia Still Company We kick things off with introductions and a relaxed overview of fermentation and mash design, then quickly roll up our sleeves. Day one is all about understanding what’s happening in the mash and why it matters. Topics include: Grain and malt selection Enzymes and conversion (without the unnecessary jargon) Yeast choice and fermentation strategy Traditional methods alongside modern approaches Together, we’ll build a mash from start to finish, breaking down each step so you leave with both confidence and context. Lunch is provided, and the pace stays comfortable, no rushing, no pressure. Day Two: Distillation, From First Heat to Final Cut Big Creek Distilling Co. Day two takes us just down the road to Big Creek Distilling Co., where we strain the mash and run a full whiskey distillation. We cover: How a still works and why it’s designed the way it is Running a spirit safely and intentionally Making cuts and trusting your senses Blending and introducing flavor You’ll see the entire process unfold, with plenty of time for questions, tasting, and discussion. Lunch is provided, followed by a guided tasting session to connect technique with flavor. That evening, we head back to North Georgia Still Company for a fire pit gathering and hosted dinner, an easygoing close to the weekend, focused on conversation, shared experiences, and good spirits.
