The Aged Collection Tasting invites you to explore a curated selection of barrel-aged sake alongside the distinctive creations of Nine-tailed Fox aged beers—an immersive journey through flavour, craftsmanship, and transformation. Ageing is where the magic happens. As sake matures, it evolves into a richer, more layered expression, developing notes of caramel, honey, dried fruits, and deep umami complexity. As our barrel-aged sake absorbs the character of wood and time - revealing nuanced profiles of vanilla, spice, oak, and subtle sweetness imparted by the barrels themselves.
