Country - Ethiopia Region - Sidama Producer/s - Local smallholders Washing Station - Bishan Wate Processing - Washed – double cold, fresh water washed, after aerobic and anaerobic fermentations Varietal/s - Local Landrace Altitude - 2000 MASL Harvest - January 2026 Flavour Notes - Red berries, floral & oolong Bishan Wate is a washing station in Hambella, West Guji, owned by Testi Coffee, the family-run company founded by Faysel Abdosh Yonis. Established in 2017 and sitting around 2,000 metres above sea level, the station receives freshly picked cherry from around 500 smallholder farmers in the surrounding area. The high elevation and cool climate slow the ripening of the cherries, helping build the density, sweetness and complexity we love in coffees from this part of Ethiopia. This is their Special Prep Improved Washed lot — a more meticulous version of traditional washed processing, with greater attention given to selecting and sorting the best ripe cherry. Rather than using processing to dramatically change the coffee, the work here is about cleanliness, clarity and allowing the character of Hambella to come through. There is careful fermentation after defects have been removed and final washing is done twice with fresh cold water each time to slow and stop continuous fermentation.
