$35.00 per bottle | $420.00 case of 12 The Origin: Álvar's everyday red, drawn from three plots of 25–40-year-old Tempranillo (with about 10% Garnacha) on sandy soils in northwestern Toro. The Profile: A warm, dry 2025 shows in the glass — deep colour, a heady nose, and a juicy, round palate of primary sweet berry fruit, ripe cherry and a dusting of spice, with generous, softly grippy tannins. Bold and lip-smacking; the bottle you open while a stew is on the stove. (The 2021 earned 91 points from both Wine Advocate and James Suckling.) The Craft: Made like his single-vineyard wines — organically farmed fruit, whole-cluster fermentation with indigenous yeasts, a gentle foot-trodden maceration, aged in large neutral French oak foudres (1,000–3,500 L) so the fruit leads. ~25,000 bottles. The Pairing: Serve lightly chilled (14–16°C) with a hearty stew, grilled sausages, roast chicken, or a weeknight bowl of pasta.
