Takamine Koji Fermented Whiskey is made with the patented Takamine Process, which uses an ancient Japanese mold, koji, to convert starches to sugars in a process similar to malting barley. This 100% barley ferment is then pot-distilled twice and aged in 2nd-fill American White Oak casks. After six years in white oak, the whiskey spends a final 10-14 months in sherry casks. The result is a robust whiskey with classic sherry cask character and layers of dark cherry, dates, and bittersweet chocolate. Velvety without being cloying.
