The spice — star anise, cardamom, a trace of vanilla — comes from the leaf itself, not from syrup added after. Hand-Cooked · Two Hours Pineapple & Litsea 木姜子菠萝 Whole pineapple, cut in-house and reduced slowly in a wide pan until the fruit turns from pale to amber and loses half its weight. Litsea cubeba goes in at the very end — a mountain berry that reads as lemongrass first, then a low warm pepper. This is the layer people ask about. Sponge · Fresh Extract Pandan Chiffon 斑斓戚风 Fresh pandan leaf extracted in-house, no colouring. Green the way a leaf is green — soft, slightly grey, never neon. Light enough to carry the tea cream without adding weight to the slice. Layer · Set Soft Coconut Milk Pudding 椰奶冻 Set only just enough to hold a clean edge on the knife, and soft enough to give way on the spoon. It sits between the tea and the fruit and keeps the two from arguing.
