Both Riesling (15th February) and Marsanne (1st March) were harvested in the early morning. Whole berry pressed to stainless steel for natural, cool fermentation. The ferment was stopped at the point of sugar and acid in perfect harmony – around 10g/L residual sugar present. The wine was then bottled under crown seal to continue its fermentation. An ever evolving wine, this Pet Nat has yeast lees, which provide complexity and flavour. The wine is bright and juicy with lots of Riesling zesty notes and texture from the Marsanne. Best served chilled as an aperitif. Orange, N.S.W
