In the far reaches of southwest Colombia - at the intersect of the Ecuadorian border and the Pacific Ocean - lies the region of Nariño; incredibly unique in its topography and growing conditions, it produces coffees that stand distinguishably apart from other Colombian regions. At the top of the qualitative pyramid in the region is Frank Torres. His rare, combined command of cultivation, process and QC produces some of the most dynamic coffees around, full stop. His coffees are hand-picked for optimal ripeness, then subjected to a multi-phase process wherein a series of metrics (pH, Brix, conductivity, alcohol, microbiological activity) are continuously being monitored. The result is a cup with incredible depth, seemingly unending sweetness and clearly defined fruit.
