We kept sending out an oil dispenser with nothing to put in it. So we made the oil. Extra virgin, cold-extracted from Galega, Cobrançosa and Picual olives — straight from the fruit, by mechanical means only, at just 0.3% acidity. Bottled with Caves São João, who have been doing this in Portugal since 1920. Pour it over warm bread, into a salad, or straight into a fried egg. This is oil made to be used, not admired from a shelf. And when it’s empty, don’t recycle it. Rinse it out and it becomes a water carafe, a vase, or the refill for your New Party Dispenser. The bottle outlives the oil. A tiny note about the pourer: Yes, the little metal pourer is included. Because each bottle is handmade, there can be the tiniest variation in the size of the neck. So, on some bottles, the pourer may not sit perfectly flush inside. It still works exactly as it should and does not leak — it’s simply one of those charming little things that happens when humans, rather than machines, make things.
