The Santuario Project Ixhuatlán Processing Centre in Veracruz is a fully integrated facility dedicated to producing exceptional coffee. It works with small producers from the region to isolate the best lots, focusing on quality from farm to cup. Cherries are selectively picked at varying stages of ripeness, then meticulously sorted and cleaned before processing. The facility ensures precise control over each fermentation stage, using state-of-the-art equipment and careful drying methods on African beds to maintain temperature and humidity stability. The result is a clean, stable coffee with great clarity and a smooth, long finish.
