Sourced from Clare Burder and her family's vineyard on the Whitlands High Plateau, this Chardonnay captures the precision and elegance of one of Victoria's highest and coolest wine-growing regions. Grown at approximately 800 metres above sea level, the long, slow ripening season preserves vibrant natural acidity while building flavour intensity and texture. The fruit was 100% whole-bunch pressed before being barrel fermented, with full malolactic fermentation and regular lees stirring to build complexity, structure and a beautifully fine palate. The result is a Chardonnay with real depth and balance with a fresh, textural and effortlessly drinkable. Tasting Note Pale straw with bright green hues. Aromas of white peach, lemon/lime zest are layered with citrus blossom and a subtle flinty minerality. The palate is generous yet finely balanced, combining juicy stone fruit and citrus with flinty lees-derived texture and gentle oak spice. A vibrant line of natural acidity carries the wine through to a long, savoury finish, making it both immediately enjoyable and highly versatile at the table.
