Bolivia CLP Pacamara
CLP Origin: Bolivia Farm: Calama La Paz Region: Calama, Caranavi, La Paz Process: Fully Washed Varietal: Pacamara Tasting Notes: Apricot Fruit Cake, Mugicha, Caramel Butterscotch, Cola Candy Filter Roast, available as 200g Bolivia is one of the smallest specialty origins on the map, and Calama is smaller still. The lot comes from a group of smallholders around the community of Calama in Caranavi, most of them working plots under five hectares at 1,400 to 1,600 masl. Cherries are floated, depulped, fermented in open tanks for around a day, then washed clean and dried on raised beds under greenhouse cover. Slow, careful, entirely by hand. Pacamara is the wildcard. Big beans, big flavour, and here it lands somewhere unexpected: apricot and dried fruit up front like the top of a fruit cake, then a toasted barley depth that reads exactly like mugicha. Caramel butterscotch sits underneath the whole thing, and it finishes on something curiously like cola candy. Sweet, a little herbal, more moreish than it has any right to be. A washed coffee that drinks with the sweetness of a natural. Best brewed clean and let it cool. A small lot, so 200g bags only. Roasted to order in Singapore. Rest 5 to 7 days.
