These are the methods we think will extract the best possible cup. However, this coffee can be ground and enjoyed with any brew method that you desire. About the Process Traditional Naturals: Traditional natural process coffee is made by drying freshly harvested, ripe coffee cherries whole, without removing the skin or pulp, allowing the sugars and fruit compounds from the cherry to slowly ferment and infuse into the bean. The cherries are spread on patios or raised beds and regularly turned to ensure even drying and prevent defects, with the process continuing until the coffee reaches a stable moisture level suitable for hulling. This method typically produces coffees with heavier body, enhanced sweetness, and pronounced fruity or wine-like characteristics, reflecting one of the oldest and most heritage-driven approaches to coffee processing. Cupper's Notes This is a traditional natural process lot, which we roasted medium with a drop temperature of 203°C. It bore a prominence across acidity, balance, and sweetness, making it very well-rounded across all parameters. In the cup, we discovered tasting notes of White Raisins, Caramel & Cinnamon.
