Sukenari HAP40 gyuto 270mm
A Japanese chef's knife handcrafted in Toyama, Japan by Sukenari Hamono. This 270mm gyuto has a HAP40 core with stainless cladding and a migaki finish. HAP40 is a semi-stainless steel mainly known for its edge retention. It will develop a patina, but far more slowly than a typical carbon steel. Stainless cladding keeps maintenance simple and limits reactivity to the exposed core. It comes paired with an octagonal bocote handle with buffalo horn ferrule. Bocote is a dense and stable wood with striking dark stripes.
