Tasting Notes: Savory yet fragrant expression. Quince and nashi pear with a hint of ginger and lemon rind. Food Pairing: Crudo dill, labneh, lemon, capers Season: A warm wet spring followed by a hot and reasonably dry summer, with rain at welcomed intervals. Vines were shoot thinned and and crop reduced to balance vines. Beautiful ripeness from the 2025 season giving depth and power to wines. Winemaking Notes: - Picked in the cool of the morning, then crushed and left on skins for 24 hours prior to pressing. - Pressed without a cut to one tank.
