A beautifully poised cool climate Viognier, where the grape’s generous stone fruit character is lifted by the freshness of Elim’s Atlantic influenced vineyards. Barrel fermentation adds a gentle honeyed richness and silky texture, while the coastal acidity keeps it vibrant and refined. A lovely match for roast chicken, richly spiced dishes or creamy fish pie. Taste Yellow peach, apricot and honey meet soft floral notes and a hint of spice. The palate is rounded and creamy, with eight months in oak lending depth and gentle warmth. Fresh acidity draws everything together, leaving a long, elegant finish.
