About seven years ago they planted a small plot of Geisha alongside their established Bourbon — a bet on bringing more organoleptic range out of an already award-winning farm — and this washed lot is part of that newer program. Cherries are picked at peak ripeness, pulped, and fermented 8-12 hours before washing, then dried on African beds for 13-18 days. The trees get the same treatment as the rest of the farm: native and inga shade, sandy loam soil, and both soil and foliar fertilization, all under sustainable practices modeled on Rainforest Alliance standards.
