Gérard Boulay, a vigneron in Chavignol, Sancerre, has been crafting wines that reflect the region's unique terroir since taking over his family's estate in 1976. His vineyards, planted on Kimmeridgian soils rich in limestone and fossils, are farmed organically with minimal intervention. Boulay's approach includes hand harvesting, natural fermentation, and aging in neutral oak barrels, allowing the wines to express their origin authentically. Sibylle is Gérard Boulay’s 100% Pinot Noir rosé from the steep slopes of Chavignol, made from fruit grown specifically for rosé rather than as a by-product of the reds. Direct pressed and vinified in tank to preserve freshness, it’s beautifully lifted with raspberry, redcurrant, rose petal and a touch of orange peel and spice. The palate has lovely texture and depth, balanced by bright acidity and Chavignol’s distinctive stony minerality. Fresh and vibrant, but with enough structure and complexity to make this a seriously gastronomic Sancerre rosé.
