Colombia Modern Washed SL28 LOT 1

Lot 1 opens the series with the ripest cherry selection of the three, harvested at 18.2° Brix from Shady and Elias Bayter’s SL28 trees at El Vergel Estate. During flotation, the cherries were treated with both citric acid and salt, then fermented whole for 36 hours. After depulping, they remained in mucilage for another 24 hours before drying. Because this lot was picked at its own point in the harvest, it offers a specific snapshot of the fruit and growing conditions present at that moment.
