This specific malt and yeast foundation is our ultimate go-to when we want everything else to step aside and let the hops do the talking. By pairing a premium, extra-pale Pilsner malt base with a touch of dextrin malt, and fermenting with WHC Lab LAX yeast, we created an incredibly crisp, dry canvas that allows the hop profile to truly pierce through. For the hop bill, we relied on a legendary duo that never fails: Hollingbery Mosaic and Hollingbery Simcoe. These particular hops come from the exact lots we personally selected on our sourcing trips out to Yakima. The resulting beer is bursting with vibrant tropical fruits, bright citrus, and a hint of classic dankness.
