Tasting The wine has a deep ruby colour. The aroma is very intense and complex, with notes of shrubs, olive paste, floral, black fruit, stony notes, and with very well integrated wood. It has excellent volume on the palate, firm tannins, crisp acidity, shrubby notes, olive paste and black fruit, with a long and elegant finish. Harvest year Cold and dry winter. An extremely rainy spring was beneficial for replenishing soil water reserves; however, it affected flowering and contributed to an abnormal incidence of vine diseases, resulting in significant losses. Despite the hot and dry summer, soil moisture levels provided a long and balanced ripening period, allowing the production of excellent quality wines. Maturation The wine is matured in 1,200 litre French oak barrels for around 30 months. It undergoes numerous tastings and analyses during this period to monitor its ageing process. It is only lightly filtered before bottling, in order to preserve the highest quality. Store Bottle in a horizontal position. Ready to drink but with a very good capacity to develop in the bottle. Optimum drinking time varies with the wine. Ideally, from 3-4 years after the harvest date (on the label). Serve Decanting advisable 2 hours before serving, to breathe. Wines aged 5+ years should be decanted after keeping the bottle 24 hours in an upright position to allow sediment to settle. Recommended temperature: 16ºC to 18ºC. Drink within 24 hours of opening.
